Our Process

Determine number of bottles

• 96 bottles or less – choose from our premium barrels already proofed and processed for the best and maximum flavor. We welcome your colleagues/ fellow bourbon enthusiasts to join us, and then to Step 3.

• 108 bottles (1/2 barrel) to a full barrel (approximately 236 bottles)

For Full or Half Barrel Project –  Let The Fun Begin!!

1. Select your barrel in-person (whenever possible) with Dave Sweet.

• We provide several samples of hand-selected barrels and work with you to choose a barrel that best suits your personal tastes and flavor preferences.
• Can make this a group event with several of your colleagues/team members/ fellow bourbon enthusiasts

2. Discover and Identify the Ideal Proof For Your Barrel – The whiskey’s flavor will dramatically evolve as the proof of the whiskey is adjusted.

• We’ll add water literally drops at a time using a syringe to a group of glasses so we can compare and evaluate.
• Working with David, you and your group will experiment until you find that “Sweet Spot” with the most flavor and what is right for you and your flavor preferences. A larger sample will be made and the proof will be noted.

3. Design Your Custom Label

• We offer multiple label samples and ideas
• Discuss with you what you are looking for, your desired messaging…
• Welcome any ideas or concepts you have seen from other labels
• These will all be compiled with pictures, logos and other imaging/text you may wish to include along with all of the label discussion/feedback and given to the
• The designer will draft a concept label for your review, this will then be adjusted and modified with your input until your final approval.
• If you would like the flavor profile/description on the label, David will work with you to create a professional write-up and ensure it fits with the label’s motif.

4. Final Process –

• After the label is approved and finalized, it is submitted to the government for registration and approval.
• While the labels are being approved and printed, the bourbon is moved into a holding tank/drum and proofed down to the target ABV.
• Final check and confirmation of Proof, and more importantly – also compared with the original sample from Step 2 above.

The bourbon is bottled, labeled, boxed and ready for delivery/pick-up.
