We review, taste and analyze 10 to 12 barrels in order to select 3 or 4. Every barrel in our inventory and presented to you has been personally selected and approved by David Sweet. Often accompanied by fellow bourbon enthusiasts and guest industry professionals participating in the process, their input always welcome.
The result – we only select the very best barrels available from already preferred lots.
